Easy Ham, Bean & Veggie Soup

I love this soup, it’s easy, tasty, nutritious, and everyone loves it. This is my recipe, but you don’t have to follow it 100%. I really just used what I had in the fridge and you can do the same. If you have celery instead of mushrooms, add it. It’s no big deal to swap out for other veggies or even other seasonings. Whatever you do, be creative, have fun and have confidence; they’re gonna love it!
You can use:
7 cups chicken stock
2 cans beans of your choice (I prefer white beans)
1-2 cups ham (depending on how much meat you like)
2 small bell peppers (I prefer one red and one orange)
1 cup onions
2 cups mushrooms
2 cloves garlic
2 carrots
1 bag of spinach (5 oz)
1/2 cup cilantro (optional)
2 tbsp olive oil
1-2 tbsp honey (optional depending on taste preference)
2 tbsp apple cider vinegar
1-2 tsp cayenne pepper (optional depending on your “kick” preference)
Salt and pepper to taste
*Serves about 5
Directions
Add olive oil to a large pot and bring to medium heat. Saute the onions, garlic, bell peppers, mushrooms, carrots and ham. Add chicken stock, honey, apple cider vinegar and cilantro. Turn heat to high and bring to a boil, once it reaches boiling, reduce heat and simmer for 10 minutes. Add beans and spinach, return to high heat. Once it reaches a boil, reduce to low and simmer for another 10 minutes. Remove from heat and enjoy!
