Delicious Crab Salad

One of the best joys about living in San Diego is the ever so prevalent access to seafood. I love going out fishing along the coast with my Dad, Steve, and other friends. But, sometimes we can’t go for one reason or another. So there is this really cool Tuna Harbor Dockside Market where you can buy fresh caught local seafood. As in food that was caught the day before. We recently went and among the giant Dorado and Sheephead we got, we were also able to snag a California King crab. It's a little different than Alaskan King crab, think of California King crab being like a mix between Alaskan King crab and Dungeness crab. It's simply delicious. We decided to make a crab salad with it, not something we would normally do, but wow was it super tasty! Here is how we made it:
Ingredients
1 Whole Californian King Crab (or any other type of crab you prefer)
Red, Yellow, or Orange Bell Pepper
Capers
Red Onion
Green Onion
Garlic
Lemon
Mayonnaise (equal parts to cream cheese)
Cream Cheese (equal parts to mayonnaise)
Old Bay Seasoning
Salt and Pepper
Cayenne Pepper
Directions:
Steam the crab with old bay and water until cooked through. Let it cool, take out all the meat, chop it up, and place in a bowl. Add all of the other ingredients and stir thoroughly. The amount of each ingredient you should use depends on your preference of how spicy you like it, how creamy you want it, how much crunch from the veggies you want and how many people you are serving. Be your own creative chef. You can serve immediately or set in refrigerator and serve within a day or two. Serve it with crackers, chips, or sourdough bread for a delicious snack or meal. Enjoy!
